The Simple Woman's Day Book

I am once again joining in on the Simple Woman's Day Book, check out the other ladies here....
FOR TODAY
Outside my window...it is COLD dreary and rainy again

I am thinking ..How much I will appreciate Spring when it gets here..

 I am thankful …..for my warm home, and that Connor didn’t break more bones when he fell down the stairs at school Friday. He only broke his wrist and bruised his hip and elbow. As far as he fell it could have been worse, His Angel was there to cushion his fall.

From the kitchen...hot coffee and fresh home made peanut butter cookies for DH and Nutrisystem cereal for me with bananas and milk.
Supper beef roast with carrots and potatoes in the crock pot. For me what ever box I grab from the Nutrasystems shelf and a big green salad..

I am wearing…Green Tinker Belle fleece P.Js with lime green fuzzy sock.

I am going…to try and rest as much as possible today, feel a lot better, but you don't mess with the crud, just when you think your good, it jumps up and hollers "surprise, I'm back"
I am creating... A slide show of photos I’ve taken using my new camera on the sports setting, of my bird feeder outside my window…

I am reading...We are finishing up with Beth Moore’s study of Daniel. Will start a study of James next week.

I am hearing...DH snoring along with ChiChi, my, for a little dog she sure snores loud…

Around the house...need to wash a few clothes and make up the beds, also need to mop the floors, but think I’ll wait till this rain goes away.

One of my favorite things...watching the birds fly to and fro from feeder to feeder and watching the squirrels playing in the yard…

A few plans for the rest of the week:
Monday…get house back in livable order, pick up MooMoo from school, while her Mom and Dad take Connor to the Bone Dr in Jackson to get wrist set.

Tuesday…do a little house work, clean up den and get area ready to set up DH new computer when it arrives sometimes this week.

Weds….do what every I feel up to, and go to Bible Study we will finish Daniel.

Thurs…Go get my hair fix, missed my appointment last week because of the crud, but really really need to go this week, I’m even scaring ChiChi I look so bad…lol…

Fri. …maybe go to Jackson, depends on the weather...

Sat…haven’t really planned that far ahead right now.

Sunday  Church and hopefully a day of rest…..

Enchiladas

This week I am joining the meme A-Z on Monday ~~ blogging our way through the alphabet~~ All About Food! at Unglazed, check out her blog for other foods starting with E this week...
My word this week is Enchiladas, one of DH favorite foods, I found this recipe at Recipezaar and we just love it...

Authentic enchilada recipe from San Antonio. The Enchilada Gravy recipe will make 3 quarts so use as much as you like then refrigerate or freeze the rest. Cook time includes time to make Enchilada Gravy and Chili con Carne. Prep time is the time to make the Enchiladas. Enchiladas can be frozen fully assembled then thawed and heated in the oven. This recipe looks complicated but it is so easy, just throw everything into two pots and simmer while rolling up the tortillas! Substitute store-bought enchilada sauce for the Tex-Mex lovers, the enchilada gravy is some heavy stuff!

Enchilada Gravy Sauce

Chili Con Carne

  1. Make Enchilada Gravy Sauce.
  2. Heat oil in large stockpot (at least 3 qt).
  3. Add flour and cook until browned, stirring constantly, you are making a roux, do not let it burn NOTE: this will have almost a "dough" consistency, don't be scared once the water is added it will thin into a thick gravy.
  4. Stir in chili powder, cumin, garlic, salt and pepper.
  5. Cook roux, stirring constantly, for at least 2-3 minutes. If you do not thoroughly cook the roux it will taste like flour mixed with oil.
  6. Gradually add the water, stirring until smooth.
  7. Boil gently for 15 minutes.
  8. Meanwhile make the Chili con Carne.
  9. Brown the ground beef in a large skillet.
  10. Add the garlic, cumin, bay leaf, salt and pepper.
  11. Cook for 15 minutes, stirring occasionally and adding a little water if the pan becomes dry.
  12. Add the chili powder and 1 cup of water and bring to a simmer.
  13. Simmer for 10 minutes, then remove the bay leaf and add the beans if using.
  14. Meanwhile make the Enchiladas.
  15. Preheat oven to 350°F.
  16. Soften tortillas, fill with American cheese and roll up.
  17. Place them seam side down in a baking dish and cover with Enchilada Gravy Sauce and Chili con Carne.
  18. Top with Pico de Gallo and more cheese to taste.
  19. Heat in oven for 10 minutes or until cheese is melted and enchiladas are heated through.

Finding Beauty Friday

Good morning ladies, sorry I haven't been around much this week, I have had a sinus and upper respiratory infection or better know as the crud, since Monday. I went to Dr and he gave me meds but have really had a rough time. I am not feeling 100% but do feel more like visiting...today is my first day to wonder too far from my bed.
But I did miss my dear friends and decided to try to post something today. I had a post already scheduled for Artful Friday so I see it did post for me. I have been having problems getting post to post when they are scheduled. To day is Finding Beauty Friday...
It's time for "Friday Finding Beauty" event on Claudia's blog Dipity Road. Today all the participating blogs can post whatever they like on their blog that touched them in some way and made them feel, see, or appreciate a moment of beauty in their lives.
 I received a beautiful pot of Tulips for Valentine, they are so beautiful when the are freshly bloomed...
 but have you ever looked at the inside when they start opening and are about ready to drop their petals. It is really an awesome wonder, how these flowers are made. The white explosion of the inside looks like a bright star burst...with little pockets of seeds waiting to be spread.
