Sunday Favorite Re-runs

It's time again for Sunday Favorite Re-runs, a new Meme hosted by Chari over @ happytodesign It is so much fun to go back and re-run some of my favorite post.
This is a post I did right after I first started my blog...and since it is summer and the gardens are coming in, I thought some of you ladies might enjoy a recipe for using your fresh tomatoes....

HOME MADE FREEZER SPAGHETTI SAUCE AND MORE

I spend all day yesterday, defrosting my old, tired...but just won't die deep freeze. Now don't get me wrong, I don't like to see any appliance bite the dust, but this is one I will be glad to bid farewell too.. When we had to buy this one 15 yrs ago, it was an emergency, since the one I had ( it was only 5 yrs old) just up and died one night unexpectantly, and it was full of all our summer labor. Isn't it funny how....that is the way it always happens. Well as I said it was an emergency to get another right then. I live in a very small town and at the time we only had a small Sears store that carried freezers in stock...lord knows we didn't have time to order one...my food was slowly defrosting. So we took what we could find and promised to buy frost free next time.
Now my hubby is a frugal man, you don't threw away a perfectly good item and replace it just because there might be something about it you don't like...hump..he don't have to defrost this sucker, Now I pray every night that it will give up the ghost and depart this world, but it just hangs in there...(where are the shotty made appliances when you need one). I think it survives just to torture me....lol..
Now that it is all clean and ready to be refilled. I will spend today and tomorrow making my spaghetti sauces and Mac n cheese. I usually take one day a month and make freezer meals for the days I am to busy to cook. DH favorite is the home made sauces that I use our home grown tomatoes in. In the summer I use them fresh out of the garden, but in the winter I used the ones I freeze for just this purpose. I plan on making a big pot of home made veg. soup next week and half of it will be put in freezer containers and frozen for a later day. I purchased a vacumm sealer several years ago and if you don't own one it is well worth the money. The saving in food the first 3 months along will pay for it.
Here are my recipe for the sauce I make . If anyone wants to use it.
Spaghetti Sauce.....
Ingredients
2 onions, chopped
2 garlic cloves, minced
1/2 green pepper, chopped
1/4 cup vegetable oil
8 cups chopped tomatoes (with no skins)
1 tablespoon oregano
1 teaspoon dried basil
1 tablespoon chopped parsley
2 tablespoons white sugar
1 tablespoon salt
1/2 teaspoon pepper
1 (6 ounce) can tomato paste
Directions
1. Combine onion, garlic, green pepper and vegetable oil in pan. Cook until onion is transparent.
2. In large pot add the chopped tomatoes, oregano, basil, parsley, sugar, salt, pepper and tomato paste. Cook for 2-3 hours on low heat stirring frequently.
3. Let sauce cool. Pour sauce into quart size containers or freezer bags. Store in freezer.
Note: You may add hamburger, mushrooms etc. when preparing the sauce to eat.
Mac' N cheese
8 oz dried macaroni noodles
5 tbsp butter
6 tbsp white flour
3 cups milk
1 small green or red pepper, sliced (or half of each color) (optional)
1-1/2 cups cheddar cheese
2 cups fresh breadcrumbs
salt (optional)
pepper (optional)
Cook macaroni noodles according to instructions until al dente. Drain. Melt a small amount of butter and mix with noodles, to prevent them from sticking together. Cover and set aside.
Melt 5 tbsp butter, add flour and stir over medium heat for about thirty seconds, being careful not to brown. Add milk and whisk until mixture thickens. Add salt and pepper, reduce heat and simmer. Heat pepper on stovetop in a separate pan, or microwave for about a minute. Add to milk mixture, then add cheese, stirring until melted.
Toss mixture with macaroni noodles, and place in a 3 pint casserole dish or disposable foil casserole dish. Top with breadcrumbs. Can split into two for smaller families. Allow to cool, cover and freeze.
Instructions from Freezer:Allow to thaw at room temperature for one hour, or all day in the refrigerator. Preheat oven to 350 degrees, and bake for 45 minutes. If you split into two, baking time may be reduced.
I usually make 2 batches of this, in one I put peppers for hubby and 1 without peppers for my Grands, they're not crazy about bell bepper.

This is a neat site for other Mom's who, like me, love to plan ahead....
Beef & Broccoli Freezer Recipe
1 lb beef strips (can use inexpensive steak cuts)
1 red pepper, chopped
1 large onion, chopped
4 cups broccoli florets
1 can cream of broccoli soup
1/2 cup water
1 tsp dried basil
1/2 c cheddar cheese
Cooking oil
Heat a small amount of cooking oil in skillet and saute pepper, onion and broccoli about five minutes or until tender. Remove veggies from skillet. With another small amount of cooking oil, stir fry beef until cooked through, about 6-8 minutes, depending on the thickness of strips. Add soup, water and basil, mixing well. Add vegetables, bring to boil. Reduce heat and cook over low for ten minutes. Add cheese, stirring until melted. Allow to cool then transfer to freezer containers.
To serve: Defrost then reheat over low heat in skillet.
I hope these will help someone and that you enjoy them. I got to get busy...never any rest for the weary...who ever said retirement was boring didn't live at my house...lol..bye now.

Pink Saturday...all pink and girlie

I have a very different Pink Sat post this week, it could be called Barbie Saturday...lol..Got all kinds of pretty pink Barbies to show.
Last month when My Rissa Kat was staying with me for a few weeks,
(she loved to go shopping), well this particular day we had run to Wally World to buy some Groceries, well you know, no self respecting young lady is going to Wal-Mart without checking out the latest Barbie designs.
We made our way to the toy department and Heaven's to Bestsy you can't believe all of the pink Barbie treats they had just waiting for her to drool and dream over.

FavoriteFoto Friday

This morning when the post man came by, he left me a package that I was not expecting, when I opened it I had to cry, I received a letter and a CD full of pictures from my Cousin who lives in Beaumont, TX. Jennette is my Mom's oldest Brother's only daughter. I don't cry easy, but I did cry when I watched this CD and traveled back in time to a very special place that is no more....
Uncle Reggie was 16 yrs older than Mom and by the time she was 5 he had married and moved to New Orleans, LA. He and Aunt Gena lived there until Jennette Graduated High School in 1944. In 1945 they moved to Beaumont and lived there until he passed away in 1989. Uncle Reggie married Gena Panzica in 1920, you could look the world over and never find a lady any sweeter than Aunt Gena, she and Uncle Reggie adored each other, right up until the day she went to heaven in 1987. The only problem was (or according to her Dad and my Granny) they didn't belong together, when they started dating they had to slip around and finally ran away and got married, they moved to New Orleans and didn't returned to Brookhaven untill their 2d child was born, they had 3 children.......from what I was told, her father never forgave her or excepted their marriage. The "problem" she was Italian and Cathlic, he was Irish and Baptist, a mixture not excepted to well in the early part of the century. Her Daddy forbid her to see him and Granny threw a fit, because he was seeing an "Italian." But nothing they could say or do would keep them apart.
This is a picture of Aunt Gena's Family, .....The Sam Panzica Family....she is the smallest girl, wasn't she pretty....
Next is a picture of Aunt Gena on the right and in the middle is her Momma, Josephine, on the left is her older Sister Mattie in the 40's before Josie passed away.
This is a picture of Uncle Reggie in the early 50's with Jennette's 2 children. He looked so much like Granddaddy and had GD's personality...sweet.
This is a picture of Jennette when she was about 5, I am amazed how much she favors, my little Rissa.
 
This is a picture of Jennette in the late 40's when she came to Brookhaven to visit her Cousin,  Betty Jean Panzica, it was made at the train depot you can see the Inez Hotel is in the back ground. The little bare footed girl in the front is my Sister Dean. Doesn't she look like she is pissed off at some one...lol...PS, she is wearing a dress Momma made her out of a feed sack....looks pretty good, don't it/
 These next group of picture are made at the farm, I was so glad to get these because I don't have too many of the farm and none of the old barn. This is Jennette standing in front of the old barn....the barn in the back ground on the left is the old cow barn, it was spared during the fire.
This is a picture of her sitting on a rope swing hanging from the old wisteria vine in the front yard.
Behind her is one of the front pastures, where they grow corn....
I just love this one, notice Aunt Gena's stockings rolled down, this was made right after the corn harvest, notice all the dried corn stalks on the side of the lane.
These was made before we moved to the Farm.

Reflections of a Mississippi Magnolia...

Well my friends I want y'all to know that I have realized I don't know myself as well as I thought. I have constantly remarked that I am not much of a reader, I usually get bored reading..but I am having to correct myself I have discovered a book that really grabbed my attention and made me smile, I first saw a review about it over at Southern Lady's place and decide it looked interesting, I do love all things Mississippi, so I ordered it from Reed's Department Store, (there is also a poem about Reed's in the book) I received it in the mail this morning. It was raining and not much going on, so I curled up in a chair with a hot cup of coffee to read a few pages. Let me tell you I was not able to put it down. This book by Patricia Neely-Dorsey is one of the most interesting and entertaining books of Poems I have ever read, heck it's about the only book of poems I've read, most don't hold my interest long enough, but this little book of Poems about the South really touched home, so many of the stories, were me...All I had to do was look deep into my soul and it was me she was writing about.

SOUTHERN LIFE
If you want a glimpse of Southern life,
Come close and walk with me;
I'll tell you all the simple things,
That you are sure to see.
You'll see mockingbirds and bumblebees,
Magnolia blossoms and dogwood trees;
Caterpillars on the step,
Wooden porches cleanly swept
Watermelons on the vine,
Strong majestic Georgia pines
Turnip greens and.hot cornbread,
Coleslaw and barbecue
Fried okra, fried corn,fried green tomatoes
Fried pies and pickles too
There's ice cold tea that 's syrupy sweet
And cool, green grass beneath your feet
Catfish nipping in the lake

This is one of her first poems and it draws you into the book, once I read this I was hooked....
I am not a book reviewer and I can't tell you about the book in flowery language, I can only tell you how I feel and I feel this book is well worth reading whether you are from SC, MS or any other Southern State. Some of these poems will ring true to all of us North, South, East or West.....in a simple way. From her poem about Yardsaling, oh! does this one hit a happy note...lol...
Yardsaling
Yardsaling is a southern art,
And to some it's away of life;
It's a way of getting almost anything,
Without the stress and strife.
You meet all kinds of people,
And you see how others live;
And while the kids sell lemonade,
You negotiate what you'll give.
There's always a faithful crew,
That get up before the dawn;
To see what treasures they might fine,
On some neighbor's lawn.
There's much anticipation
Of the next bargain 'round the bend;
And everyone knows in yardsaling,
The possibilities never end.
There's always something
You've been searching for
Suddenly, staring you in the face;
And when your eyes lock on to it,
Your heart begins to race.
There's nothing like the yard sale game,
Or should I say the sport;
It quite easily becomes an addition,
If you're of that sort.
Or poems like The Country Breakfast, Partyline, how many of you remember the phone party line, she really hits the nail on the head in this one, I was back on Granny's farm on our 6 party phone line, that was our game on Sat morning listening to folks gossip...

Patricia is a lovely Lady who was born and raised in Mississippi, went to College in Boston but returned to her beloved State to live with her husband and son. I Found Patricia Monday on FaceBook an I must say she is such a sweet lady. We have so much in common...We share the same country roots and love for our State...
